Red Cabbage Salad with Pistachio Arugula Dressing

Ingredients

Dressing Ingredients:

  • cup shelled pistachios
  • cup olive oil
  • ½ cup arugula
  • 2 tablespoons lemon juice
  • ¼ teaspoon kosher salt
  • 2 tablespoons warm water

Salad Ingredients:

  • 2 cups shredded Red cabbage
  • 2 cups arugula
  • 1 orange or tangerine cut into segments
  • 1 chopped green apple
  • ¼ cup dried cranberries
  • 2 tablespoons chia seed

Instructions

To make the dressing:

  • Blend all ingredients in a blender. Each make about 4 servings of the dressing.

To make the Salad:

  • Combine all ingredients in a bowl and toss with the dressing to combine.
